Serving Beer: The Finish
For bottle-conditioned beers, finishing the pour is an important step. Some styles, like Hefeweizen, are expected to include the yeast sediment. To get that last bit of sediment out, swirl the remaining beer in the bottle and then add it to the glass. For other styles and tastes, leave out that last bit of beer for a clearer serving. The yeast sediment present in bottle-conditioned beers is high in B-complex vitamins, but its sharp taste and resultant bloating may be unpleasant for some!
