Isinglass

What it does :

Isinglass is used to clarify beer and prevent haze, while improving the foam, flavor and stability of the finished brew.

What it is:

This additive is also known as white finings and is made from the swim bladders of sturgeon. It is available in three forms: flocked, powered, or shredded.

How it works:

Isinglass clarifies beer and prevents haze by causing proteins and yeast to settle out of the beer. It also removes some polyphenol and lipid materials, thereby improving beer foam, flavor and stability.

Mechanism:

This material contains collagen molecules that are very effective at electrostatically attracting the proteins and yeast, which then settle out of the beer for easier removal.

Dosage:

In solid form, use 1 teaspoon per 5 gallons. In liquid form, use 2 ounces per 5 gallons. Add to the secondary fermenter. Mix thoroughly into the beer. Allow at least 2 weeks to clear then rack off for bottling or kegging.

Preparation:

Dissolve 1 teaspoon in 8 ounces of sterile water and let stand overnight. Use 4 ounces of water for lighter beers to reduce the amount of acidified water added. The water should be an acidified solution to make the collagen soluble. Use citric, malic or, tartaric acid to acidify water to a pH of 2.4 - 3.0. The resulting solution will be very viscous.
