Flaked Rice

What it does :

Flaked rice does not add any flavor to your beer. However, it will lower the protein and tannin content of your beer. As a result, it will lower the body of your beer. It will also help to eliminate the haze potential when used as a substitute for 6-row barley malt. Flaked rice will add a characteristic dryness to the mouthfeel. Its use can help to accentuate hop flavor in the finished beer. You can use it to make Pale Lagers.

What it is:

This is rice that has been steamed and rolled to gelatinize its starches, making them accessible for conversion to sugars. Because the grain is un-malted, it does not possess the enzymes required for this conversion by itself and it must be mashed with malted grains.

Dosage:

Flaked rice can be up to 10 percent of your grist.

Preparation:

Because it has been processed into flaked form, pre-cooking flaked rice is unnecessary to gelatinize its starches. It is ready for you to add directly to your mash to convert its starches to fermentable sugars.
