Allspice

What it does :

Allspice is used throughout world cuisines, and can lend a flavorful addition to winter or spiced beers.

What it is:

Allspice is the dried berry of a tree native to Jamaica, and is grown exclusively in the New World. It is so-called because it tastes like a blend of cinnamon, clove, and nutmeg. It is available in whole and ground form.

Dosage:

Use up to 1 teaspoon of ground allspice per 5 gallons. Add 10 to 15 minutes from the end of the boil.

Drawbacks:

Use freshly ground allspice to get the best flavor.
